TGIF Not Your Average Grilled Cheese and fries!


Hello and Happy Friday! Whew, it was a long day today! I am so glad it is Friday. I wanted something warm for dinner, but also quick and easy. I decided to throw all of my favs into a grilled cheese sandwich and to have baked zucchini on the side. These turned out pretty good and they are good dipped in ranch (made with Greek yogurt and ranch dip). My grilled cheese had goat cheese, red onion, tomatoes, avocado, turkey, and provolone all stuffed in whole wheat sour dough and grilled to mouth watering perfection.




For the grilled cheese I just lightly buttered both sides of the bread. I crumbled some of the goat cheese on the bottom of one side of bread (the piece that is on the bottom and build up from that). Next, lay on the sliced red onion, avocado, turkey and one piece of provolone. Lay your lightly buttered piece of sourdough on top and grill. Cook over medium high and press the sandwich down with your spatula ensuring that it all melts together. Give it some time to grill and melt up. I would say each side needs about 4 minutes (but keep an eye on the bread to see how well its grilling). Your mouth will thank-you!

For the baked zucchini you will just chop up your zucchini in to small fry like thin slices. Let it soak in buttermilk, garlic powder, parsley and sea salt & pepper for at least an hour or so. Next you will dip this into panko bread crumbs that have a pinch of sea salt mixed in. Lay each coated piece on top of a rack that is on a baking sheet - or if you don't have a rack just use parchment paper. Spray these down with olive oil cooking spray just before popping into the oven. Bake at 400 degrees for about 8 minutes on each side. Dip in your favorite dipping sauce. Mine is ranch made from ranch dip and Greek yogurt.
