Hi and Happy Hump Day! How is everyone doing?
This is our dining room without any flooring. My husband is laying new wood floors. We have lived here almost 1 year and we are finally finishing the room. I am so excited to be able to finish the dining room (and just in time for Thanksgiving! ....Whoa Thanksgiving?!? It is already November!) So last night I made chicken tenders. The husband deserved a hearty dinner after working all day on the floors :-)I made these recipes based on this recipe here which was originally from Howsweeteats.com.
I thought I would try something a little different. I was happy with the way they turned out. I made two different batches. One was ranch flavored chicken tenders and the other was made with Franks hot sauce. I looove spicy food! You can alter the amount of hot sauce depending on hotness factor that you want.
Here is what you need for the ranch tenders:
1.5 lbs of chicken tenders
2 cups of buttermilk
1 packet of ranch
2 cups panko bread crumbs
1/4 cup of whole wheat flour
Extra Virgin Olive Oil spray
For the Buffalo Wing Inspired chicken tenders:
1.5 lbs of chicken tenders
2 cups of buttermilk
1/2 cup of Franks Hot Sauce
2 cups panko bread crumbs
1/4 cup of whole wheat flour
Extra virgin Olive Oil spray
You will want to marinate your chicken tenders in a dish. You can marinate for as little as 2 hours or for as long as overnight. I marinated mine for 3 1/2 hours at least. For the marinade you will mix the buttermilk and 1/2 packet of the ranch dip -reserving the rest of the ranch dip mix for the breading. Add your chicken and cover. When you are ready preheat oven to 450. In a large bowl add panko, rest of the ranch dip and flour and mix well. Coat each piece of chicken in the panko mix and lay each piece on parchment paper on a baking sheet. Continue until all chicken is coated. Spray them down with Cooking oil or olive oil before baking.
Bake on one side for 10-12 minutes. Turn the chicken pieces over and spray that side and bake for another 10-15 minutes. Really good!
For the Buffalo tenders just marinate the chicken in the 2 cups of buttermilk and 1/2cup of Franks hot sauce (you could go up to a cup if you want them spicier) and marinate. Follow the above directions above for the breading only omit the ranch and instead add a pinch of salt to the panko and flour mixture. Be sure you spray each side of the breaded chicken before baking so that you get a nice crispy coating. Bake on one side for 10-12 minutes. Turn the chicken pieces over and spray that side and bake for another 10-15 minutes. Oh soooo good!
