Indian Food Anyone?!



I have been entertaining the idea of making Indian food for a while now. I didn't think I could do this without calling in the big guns..a.k.a. a blogger whose site I love and trust. I used this recipe here. I finally worked up the courage to give this a try. I was not disappointed! I think this is a flavorful dish. I might even add this on top of some rice next time. I love the aromas that come from this dish while it is cooking. Don't be scared ( I admit I was) if this is your first time with Indian food.

Channa Masala
Serves 4
Here is what you need:
2 15 ounce cans chickpeas, drained and rinsed
2 garlic cloves, smashed and chopped
1 onion, chopped
1 jalapeno pepper, seeded and chopped
1 inch knob ginger, peeled and chopped * I didn't have fresh ginger so just used the container
1 15 ounce can diced tomatoes
3 tbsp tomato paste
1/2 lemon
1 tbsp coriander
1 tsp cumin
1/2 tsp sea salt
1 tsp garam masala
1/4-1/2 tsp cayenne pepper
1 tsp tumeric
2 tbsp butter

In a large pan heat the butter. Once the butter is melted, add the onions and cook for about 15 minutes on medium low heat, or until golden brown. Once the onions have caramelized, add the garlic, ginger and jalapeno and stir well. Cook for about two minutes.Add the tomato paste and pince. In order to do this you will need to add the paste and coat the onions well. Crank the heat up to high and walk away. Do not touch this during this process so that the paste will start to form a crust and will brown up a little. Add the coriander, cumin, cayenne and tumeric and stir well. Then add the diced tomatoes, chickpeas and garam masala. Cook for about five minutes allowing the chickpeas to heat up. Finish with a squeeze of lemon. The recipe suggests topping with plain yogurt and cilantro, but I didn't and just added the lemon. So good! You will love the way this smells while cooking!
