Happy First Day of Fall & Creamy White Chicken Chili....


Happy first day of Fall! I cannot believe it is already that time of year again. It is my favorite time of year. There is even the most magnificent moon out tonight to close out the day. I knew this would be the perfect recipe to kick off the first day of fall. It is the perfect way to enjoy a cool crisp fall day! So easy and yet so tasty! Honestly, with this recipe I like the leftover even better. I think the longer it sits the better the flavor gets. This recipe is courtesy of Jenna at http://eatliverun.com/


Ingredients:
1 lb. boneless chicken breasts cubed
1 medium sized onion diced
1 Tablespoon Veg. Oil
2 4.5 ou cans of green chili's diced
14.5 ounces of chicken broth
2 cans of cannellini beans (drained)
1 Teaspoon salt
1 Teaspoon Cumin
1 Teaspoon Oregano
2 cloves of garlic minced
1/2 cup half & half
8 ounces reduced fat sour cream


Heat your oil in a large pot over medium heat. Add cubed chicken pieces and chopped onion and saute for 6-8 minutes allowing the chicken to sear and the onions to get translucent. Add garlic and cook for about another 3 minutes. Add beans, spices, chicken broth, green chilis and bring to a boil. Reduce heat and simmer for 30 minutes. Turn off heat and add sour cream and half & half. Serve! You can top it with a little cheese and extra sour cream if you want. I didn't add any to mine and it was really good!
